Passes to the flats can be incredibly hard to shut down this year, especially if your opponents rolls out towards the receiver. To prevent him from rolling out and getting max results on a pass to the flats, simly put a DE or OLB in a contain. Cover 2 works the best vs flat coverage, but the Dollar cover 2 seems to cover the flats quite a bit better for some unknown reason. Stopping the RC will take some adjustments. To start things off, i would play a zone with buzz zones (purple) and deep zones (preferably cover 3 or 4). That by itself will do pretty decent vs mediocre RCers, but if u play people like me who will be able to RC even through double coverage, man up a OLB on the WR as well, i have found that even if i time the RC perfect, the ball will bounce right off his hands if he has 3 people crowding him. Good luck!
